Step 1: Rub the diced butter in the flour, mix in sugar and coconut until the mixture is fine.
Step 2: Clump it all up in a big ball. Place on chopping board and roll until flat. This is crucial, because otherwise the dough is really flaky and you get dust caught in your mouth when you try to eat it.
Step 3: Place in a baking tray and cut the slices with a knife. Sprinkle any leftover sugar on top.
Step 4: Cook at 180C (160C on a fan-assisted oven!) for 20 minutes.
Feeds about twenty people depending on how small you cut the slices.
